Halloween is in a few days, and for some us, it is the most tempting holiday to break diet guidelines. I love candy corn, chocolate and peanut butter, caramel apples and cider mill sugar donuts. The last few Halloweens I have worked on ways to treat myself once in awhile rather than sitting on the floor with my kids in a sugar coma. You don’t have to deprive yourself an occasional piece of candy here and there; just don’t let it derail the diet you’ve worked so hard to maintain over the past year.

I love this recipe because you can easily remove the cheese and add roasted chicken or fish in its place. The salad's versatility can make it chock-full with protein or little treats. Whatever you choose, the recipe works well with how you might like to eat on any given day. Part of healthy eating is variety!

Cooking Spaghetti Squash
I love the fall partly because of the weather but all because I love fall fruits and vegetables like apples, pomegranates, endives, spinach, pumpkins and squash. One of my favorite forms of squash is the spaghetti squash. It is higher in beta-carotene; the orange variety is also bit sweeter than its paler counterpart, although both have a mild flavor that is easily enhanced by the food served with or on it. A foodies dream, a four-ounce serving of spaghetti squash has only 37 calories.
This is one simple recipe for spaghetti squash that I found a long time ago but changed some ingredients to make it a healthy side or a great main dish instead of using traditional noodles.

I remember when I was a kid I would race off the bus after school, run right in the kitchen and grab junk food to eat because I was so hungry. I would not eat the healthy dinner that my mom cooked for me because I was so stuffed from the ice cream, candy and chips that I ate after school.

Going down the road of fitness is not always the easiest road to travel. It takes a certain level of discipline and determination to decide daily that one will make healthy choices.
